The Easiest Cheese Cake!

We love cheese cake at our house, but a conventional cheese cake is so heavy, filling & quite expensive to make. My mom used to make this one for use once in a while. Much cheaper and easier to make - no baking!



I made the cheese cake in an 11" x 7" pan.


Graham Cracker Crust: I used the recipe from the graham crumb box, did a 1.5 recipe. You can use you favorite graham crust recipe. Pat it into the pan quite firmly.


Cheese Cake Filling: Soften 1 brick (8 oz) of cream cheese. While slowly beating the cream cheese at 2 cups of cold milk. When it is smooth, add 1 box of instant vanilla pudding, continue beating for another minute. Pour over the graham crust. Allow to set on the counter, then place in the fridge.


Blueberry topping: I have a lot of blueberries in the freezer, so defrosted those a bit. This is the recipe I used (doubled it), but I think I added too much cornstarch lol. Next time I won't add as much.


See how easy that is! You can use any topping you like, usually I buy a can of pie filling, but this time used berries I had. A friend told me that you can substitute chocolate pudding for the vanilla and it's amazing! Might have to try that next time :)
